I made the vegetable soup...

enough for 2 cups per day for a week. I decided to add all the veggies that I like (and aren't many calories) and have one each day with dinner as well as two fruits for snacks and that should take care of some of my "5 a day" needs while being low on points:
Chicken broth (low sodium)
Diced tomatoes
Green hot chili peppers
Red & Green garden peppers (sweet)
Onions
Carrots
Celery
Cauliflower
a little additional salt, pepper & garlic.
I don't like mushrooms so none of that. Zucchini is plentiful right now but I think its flavorless. I love broccoli & corn but neither work well in here and it's just not the right kind of thing for potatoes.
